I had the best of intentions last week, really. But between going back to work, ice/snow storms and just being plain old tired...my plans were only modestly followed. Not all the ingredients were in the pantry, so that was an issue, and it was a Girl Scout meeting week (handing out cookie forms to parents!) which means busy. Exactly the reason we need to *stick* to the menu plan to begin with! LOL
That said, I'm not giving up. I've already got my groceries and look forward to making things easier for my husband, who will have to deal with dinner and bedtime routine on his own while I spend the week working late. At least one crock pot meal means I can "make dinner" even if I am not home to eat it.
DINNERS on hand:
- grilled cheese and soup, baby carrots
- roast chicken in crock pot, mashed potatoes, gravy, corn
- beef stir fry and rice
- meatball subs and veggies
- pizza and salad
- pigs in a blanket (hot dogs wrapped in crescent rolls), oven fries and green beans
- linguine with scallops in a wine/butter/garlic sauce
